Let’s make sardine sambal

This is sardine sambal my Singapore auntie made when she visited us in Shanghai back in 2013. It feeds 4-6 people and here’s the recipe. Step1. Chop one medium-sized onion. Cut 2-inch ginger into slits. Smash 6 garlic cloves. Slit 2 large chillies lengthwise. Grind a tablespoon of pepper. Step 2. Mix lime-sized tamarind with 2 cups of water, sieve the pulp out and mix-in 2 large tomatoes. Step 3. Add 3 tablespoon of oil into a wok and saute the onions, garlic, ginger and chillies. Add the tamarind and tomato water and bring to a gentle boil. Add sardines from 3 small tins without the juice and cook. Add salt and pepper as needed. Done.
