
This, I believe, is half a chicken on each side. Skinless but not boneless. You hammer them flat and then put them into a barbecue grill basket. Season and grill them on a pit of fire, one side at a time. If the barbecue guy knows his job, what you will get on your plate will be this perfectly grilled smoking crispy chicken which you can pull off the bones with your chopsticks to enjoy. I didn’t have this too many times in Shenyang simply because its a big portion and also because they take a bit of time to do this. I normally have chicken wings instead with other smaller dishes. But I remember distinctly that this dish was an absolutely pleasure.
