
Apparently, the quail eggs, together with spices such as star anise and cinnamon sticks are baked inside a dome of coarse salt. This creates an oven of salt around the eggs, insulating it from the direct heat but gives it a gentle bake. The spices are heated and infused into the salt. Unfortunately I have never tried this street food and I cannot tell you how it tastes. But I really like the whole concept of this snack and would love to try it the next time I am in China.
