You can get a plate of fried rice in Singapore for an average price of RMB15 / SGD3 / USD 2.1 back in 2013. In the “Malaysian Fusion” which we go very often, they charge RMB 38 / SGD7.3 / USD5.3. In Singapore nobody would pay this price. But in Shanghai, this is what you have to pay if you want an authentic plate of Singapore fried rice. And just to add to this, there is no such thing as a standard “Singapore fried rice”. It differs from a Chinese shop to a Malay shop to an Indian shop. The main difference is that Malay and Indian shops will not use pork and instead use anchovies or chicken.
