A Wok, a Woman and a Set of Wheels

Henan, 2015

These are some examples of mobile food stalls I found in this small town in Henan but which are also common to many parts of China. Most of the time its like a motorbike or a bicycle with a cart at the back. Within this vehicle, they owner has all the things needed for him/her to cook and sell his/her products. Normally this includes a gas cylinder and a gas stove, cooking utensils such as woks and hot plate etc, cooking ingredients and various sauces, take away boxes and disposable chopsticks and sometimes also a weighing machine. This particular mobile stall is selling a very local Chinese dish called jianbing which is mainly a breakfast dish but also could be eaten all day. Basically you wrap-up whatever ingredients you want in a crepe like eggs, chicken, pork, sausages, vegetables etc and together with your choice of garnishing like cilantro and also some spicy sauces. The crepe is then rolled up, folded into two and then given to you in a paper or plastic bag for take away to enjoy during your stroll. I have eaten it many times in different cities and of course there are variations in between them, but end of the day they were absolutely delicious and they completely fills your tummy. In fact if you don’t have time and need a quick breakfast or lunch on the go and you don’t mind street food, just grab a jianbing.
