At first, I wasn’t sure what I was seeing. But it was clear when I saw the menu. It was rabbit meat. Apparently rabbit is popular in Sichuan cuisine. But China is not the world’s largest rabbit meat consumer. According to Wikipedia: “… 1.2 billion rabbits are slaughtered each year for meat…the countries with the highest consumption per capita of rabbit meat were Malta, Italy, Cyprus and Japan… and the largest producers of rabbit meat in 1994 were China, Russia, Italy, France, and Spain.”
