
Hot Pot is the go-to dinner option in Shenyang, China when the winter is -20C to -30C (-4F to -22F). The hot dish warms you up internally while the fire from the stove heats you up externally. There are of course various traditions from province to province. But the Chongqing version I tried one day in a downtown place was memorable. To start with, red chilli oil was used and a variety of red chillies were added to bring the spiciness to higher levels. If you ever wanted to have your tongues on fire, this is the dish to go for.
