
One day I bought couple of scallion pancakes from a neighbourhood tree vendor and brought it home for breakfast. It was crispy on the outside and soft on the inside and the kids loved it. Maybe I should try to cook it one day because I haven’t had it for many years now. And the kids too. Apparently these pancakes are thin in Northern China and thicker in Southern China, for example, like in Shanghai. But I am pretty sure that there are many more variations of this pancake than this. China has such a long, rich and diverse culinary culture that I won’t be surprised if it takes an entire lifetime to try all the food in China with all its variations. In fact there is a story about a foreigner who once came to a province in China with a challenge to try all the dishes there in a few weeks. He apparently stayed there for a few years because it took that long.
