Tonkotsu, a white broth made from slow-cooked tender pork ribs

Shanghai. Jul 2013

Ajisen Ramen’s soup noodles are made using the “tonkotsu” soup, a thick and hearty white broth with a meaty flavour from slow-cooking tender pork ribs. Wheat flour noodles are added in together with slices of pork and egg, bean sprouts and lastly a secret ingredient called “senmiyu” which is a rich brown sauce. The end result is a deeply satisfying a bowl of ajisen ramen that is absolutely tasty and delicious.
