
One of the first things my auntie cooked for us when she visited us from Singapore cooked was a home-style chicken briyani in a rice cooker. Briyani is often called the queen of Indian cuisines because its a very complex dish requiring over 30 spices and utilising a variety of cooking techniques. But for home cooking this has been drastically simplified. My auntie’s version was cooking basmati rice with spices, layering it with a chicken dish and garnishing it with coriander leaves, cashews and raisins.
