Steaming hot food in a small simple town

A small town in Henan. 2016

I have never actually seen this dish anywhere in Shanghai, Beijing, Shenyang or in any other cities I have been to. It was like steamed dim sums but they were not steaming dim sums but other types of food. I can make out at least two options. One is a vegetarian option made up of fungus, seaweed, tofu and bean sprouts. The other option was with ham slices and what looked like fish cakes slices. I am not sure if you take them away as they are or if they are sides for rice or noodles. I think this is one of the many mysterious I took away from China and which I think I will probably never find the answer to.
