
Looking at the other makeshift set-ups in this rural road during the Chinese New Year break, I expected a humbler set-up for this. Maybe manually turned wooden skewers with chicken pieces over naked flames. But no, we have the standard rotisserie machine grilling away twenty chicken legs diligently. And as I mentioned before I became a bit of a barbecue chicken specialist during my time in China. From what I can see, these ones just got started. They have done a first layer of seasoning with sprinkles of white sesame seeds. There is some time to go before they add additional seasoning and grill it into perfection.
