
Firstly the stall must be in a fairly clean location on the street, not near toilets or rubbish dumps. Secondly take a look at the equipment they are using. Their barbecue pits, seasoning and grilling equipment and brushes must be fairly clean. Thirdly look at their barbecue products and check if they look fresh and clean. Pick up what you want and inspect it yourself. Fourthly, stand there for a while to observe if the barbecue guy looks like he started on the job yesterday or is a professional. Fifthly, use your yardstick barbecue food to make a test. For me, I always order a chicken wing to try out before deciding if I should stay or move on.
