Pork 2016

Pork is the most popular meat in China and the Chinese practically use it in every dish. In fact, according to Wiki, China is the world’s largest producer as well as consumer of pork (half of the world’s consumption). I am not surprised because China has such a big tradition and history on cooking pork. They have hundreds and hundreds of recipes using pork based on the colour of the meat, the fat, the taste, the smell etc. Some examples of pork dishes are red braised pork, sweet and sour pork, roasted suckling pig, pork soup, BBQ pork etc and the list can be endless. This particular stall is selling pork cuts in my neighbourhood wet market. You can see pork butts, minced pork, pork ribs, pork belly, pork feet etc. One thing to note is that the pork cuts are catered to Chinese cooking, not Western cooking. I think if you want to cook, say pork roast with crispy crackling, you might have to go to a speciality supermarket where you might have more options.
