I saw this elderly couple selling roasted sweet potatoes by the roadside in a small town in Henan. I have never tried these sweet potatoes although I was in China for ten years. Not because I don’t like street food but more because I am not into sweet potatoes. But I have always liked and admired the Chinese ingenuity nevertheless. A hot oven on wheels that not only cooks their products but also keeps them warm in this winter.
