Tastes even better when its couple of days old: Stewed eggs and chicken

This used to be one of my favourite snacks in Shanghai for about five years. My regular shop on the main road outside my house always had a pot of shelled eggs and chicken legs stewing in hot soya sauce. I will have a small chat with the shop owner before pulling up a chair to have an egg and a chicken leg before heading to the wet market or the shops. The truth is that the dish tastes even better when its a few days old. The eggs and chicken will look darker but they will have more flavour. This was a roadside stall in the small Henan town and was simply too freshly made for me to have a go.
