
This absolutely fabulous looking Chinese street food is called the stinky tofu. The name does do a disfavour to this dish. It does stink because of the fermentation process but the taste more than makes for it. I especially love it when its freshly made and you can dip it into the sauce and it feels crunchy in your mouth. I have written a fuller account about this dish in Stinky Tofu II when I used to have it more often in the night markets of Shenyang many years later.
